RYOTO™ SUGAR ESTER S-470 is a versatile food-grade emulsifier and stabilizer widely used in the food and beverage industry due to its unique properties. It is produced via the esterification of sugar, typically sucrose, with fatty acids derived from vegetable oils. It possesses both hydrophilic and lipophilic properties, enabling it to effectively emulsify and stabilize oil–water mixtures. This is particularly beneficial in products such as dressings, sauces, and margarine, where oil and water need to be combined and maintained in a homogenous state. This hydrophilic and lipophilic amphoteric grade has a lipophilic group of stearic acid and an HLB of 4, allowing it to interact with and solubilize fat or lipid components in food and personal care formulations, with a strong affinity toward oil solubility. This versatile food-emulsifying powder helps to impart shape retention when used in whipped creams and reduces the viscosity of chocolate, preventing blistering.
