Product Description

Lactylates are specially formulated food emulsifiers from PATCO engineered to aid in dough conditioning and strengthening, as well as stabilization and texture modification. These surface-active agents, or ionic emulsifiers, can interact with protein and starch to improve the quality and texture of baked goods, such as breads, rolls, cookies, biscuits, cake mixes, and fillings .
