Sustane™ SAIB Food Grade, Kosher is a stable, viscous, high purity distilled liquid used primarily in citrus beverages as a weighting agent or flavor emulsion stabilizer to prevent the separation of essential citrus oils. Sustane™ SAIB Food Grade, Kosher is produced from the esterification of sucrose with acetic and isobutyric anhydrides.

Overview
SAIB is a stable liquid that is soluble in most alcohols, vegetable oils, flavoring oils, animal fats, and vegetable-based waxes. It has a light color, as well as good thermal, hydrolytic, and color stability. Although Sucrose Acetate Isobutyrate is a very viscous liquid, it has the unique characteristic of changing viscosity abruptly upon the addition of solvent or increasing temperature. Sustane™ SAIB Food Grade, Kosher is produced from the esterification of sucrose with acetic and isobutyric anhydrides.
