Galacid Heat-Stable 90 is a natural lactic acid produced by Galactic through fermentation from sugar at a higher concentration of 89.5 – 90.5% total acidity. Like the 88% heat-stable grade, it is colorless, heat stable, and has a mild acid taste. It is widely used as an acidulant for preservation and flavor enhancement in food applications requiring high-temperature stability.

It is widely used as an acidulant for preservation and flavor enhancement in food applications requiring high-temperature stability. The higher concentration of the 90% grade provides more active ingredient per unit volume, which can reduce shipping costs and storage requirements for high-volume users. It maintains the same heat stability characteristics as the 88% grade, with color remaining below 50 Hazen after heating at 200°C (392°F) for 2 hours. This product also complies with FCC, USP, and JSFA standards.
