It provides effective pH reduction, mild flavor enhancement, and antimicrobial activity against a range of spoilage organisms. Its natural form is the same stereoisomer produced by the human body, making it well-recognized and accepted by consumers. Galacid Excel 88 delivers consistent 87.5 – 88.5% total acidity with high stereochemical purity (min. 97% L+).
In meat and poultry, lactic acid serves as an effective bactericidal rinse and pH regulator. In sauces, dressings, and beverages, it enhances tartness while supporting shelf-life extension. Its nearly odorless character and mild taste make it suitable for applications where strong acidulant flavors are undesirable.
