Lactic Acid 88% Food

Galacid Excel 88 is a natural lactic acid produced by Galactic through fermentation from sugar. It is fully transparent with a mild acid taste and is widely used as an acidulant for preservation and flavor enhancement in various food applications. Lactic acid is one of the most versatile organic acids available to food manufacturers. It provides effective pH reduction, mild flavor enhancement, and antimicrobial activity against a range of spoilage organisms. Its natural form is the same stereoisomer produced by the human body, making it well-recognized and accepted by consumers. Galacid Excel 88 delivers consistent 87.5 – 88.5% total acidity with high stereochemical purity (min. 97% L+). In meat and poultry, lactic acid serves as an effective bactericidal rinse and pH regulator. In sauces, dressings, and beverages, it enhances tartness while supporting shelf-life extension. Its nearly odorless character and mild taste make it suitable for applications where strong acidulant flavors are undesirable.
