METHOCEL™ E19 Food Grade is a water soluble polymer with a viscosity of 19mPas in 2% solution compliant with food standards. It hasa gelation of 2% and the best film former on Methocel™ gums
Methocel™ E19 Food grade forms semi-firm gels with heating that are softer than METHOCEL™ A-type gels, similar to F-type gels, and firmer than K-type gels; gelation of 2% solutions occurs at about 58-64°C. Moreover,it exhibits the greatest interfacial activity of the family of METHOCEL™ products, reducing the surface tension of water from 72 mN/m2 to 43-48 mN/m2. This provides emulsification and barrier properties in a variety of foods.
When Methocel™ E19 Food grade i used at low levels (<1%), it is effective in acidic foods to pH 3, nonionic and generally odorless and tasteless.
