Galaflow SL 60 is the sodium salt of natural lactic acid made by Galactic through fermentation from sugar. It has a mild taste, antimicrobial properties, and is pH neutral (6.5 – 8.5). Galaflow SL 60 is one of the most widely used natural preservatives in the meat industry.
Sodium lactate is the industry-standard antimicrobial ingredient for processed meat and poultry. It effectively inhibits the growth of Listeria monocytogenes, Clostridium perfringens, and other spoilage organisms, making it an essential tool for food safety compliance in ready-to-eat meat products. The USDA allows sodium lactate as an antimicrobial agent in meat and poultry products under 9 CFR 424.21.
Beyond its preservative function, sodium lactate provides excellent water-binding capacity that improves product yield and juiciness in cooked and processed meats. Its mild saline taste can also contribute to the overall flavor profile without introducing off-notes.
