Galacin Nisin 101 is a natural antimicrobial powder produced by Galactic through the controlled fermentation of Lactococcus lactis. It contains 2.5 – 3.0% nisin as the active ingredient with sodium chloride as the carrier, and is heat-resistant and non-dairy based. Nisin is a well-established bacteriocin that has been used safely in food preservation for decades. It is recognized as GRAS by the FDA and approved as a food additive (E 234) in the European Union.
Nisin is particularly effective against Gram-positive bacteria, including dangerous pathogens like Listeria monocytogenes, Staphylococcus aureus, and Clostridium botulinum. It works by disrupting the cell membrane of target bacteria, leading to cell death. This makes nisin a powerful tool for improving food safety and extending shelf life without synthetic chemical preservatives.
When used in combination with other hurdle technologies such as pH control, refrigeration, and modified atmosphere packaging, nisin can significantly enhance the overall microbial safety of finished products. It can also be paired with natamycin for broad-spectrum protection against both bacteria and fungi.
