Alphadim® 599 V is a distilled monoglyceride emulsifier from PATCO prepared from a proprietary blend of vegetable oils. It contains a minimum of 90% monoglyceride and is supplied as an off-white to pale pink semi-solid paste for direct addition to food systems.

Alphadim® 599 V is a concentrated distilled monoglyceride emulsifier manufactured by PATCO for food and beverage applications. Prepared from a proprietary blend of vegetable oils and containing a minimum of 90% monoglyceride, it is further processed to raise monoglyceride content above that of standard mono- and diglyceride emulsifiers. That concentration makes it well suited to direct addition at the bowl, where it complexes with starch to soften crumb, modifies fat crystal size to improve set time, and reduces oil migration in finished products. With a melting point of 54 to 58 °C (129 to 136 °F) and an iodine value of 50.0 to 58.0, Alphadim® 599 V is supplied as a semi-solid paste in 50 lb cartons. It is Kosher Pareve certified by the Orthodox Union, classified as non-hazardous under OSHA HAZCOM Standard 29 CFR 1910.1200, and manufactured in the United States under 21 CFR 184.1505.
