GMS® 540 is an ivory white, hydrated, distilled monoglyceride emulsifier from PATCO, engineered for the production of high-quality baked goods and time-sensitive food applications that require rapid performance, such as no-time dough systems. Prepared from a proprietary blend of vegetable oils and containing a minimum of 35% monoglyceride content, it effectively complexes with starch to improve the machinability and tolerance of systems and increase product shelf life. Prepared using a unique hydration process to create a monoglyceride with a higher surface area, GMS® 540 can be easily dispersed and incorporated into systems when compared to alternative powder emulsifier options.
